My favorite day trip was the scenic Bernina train trip from Tirano to Pontresina Switzerland and back. Easily done in one day with a couple hours to explore Pontresina or another stop of your choice. There is a train from Varenna to Tirano multiple times per day and then the Swiss rail station is just across the plaza. I believe the current construction on the Varenna to Tirano part is done by Sept. 14. During the construction, you are put on a bus for part of the way.

Milan is a short train ride from Varenna. We toured Milan as a day trip some years ago.

You could drive in the Valtellina region, which the route to Tirano follows. You're nestled in a mountain valley. An area for wine, cheese, apples. With some searching, you might find tours for some of these products.

We did a day trip once from Bellagio to Bergamo with a car. It was great!

If you feel sure with mountain driving you can drive to Chiavenna and the Maloja pass up to St. Moritz. The Maloja is a strange pass as it is very steep on the Chiavenna side, but the Inn valley (this is what Engadine means) descends very slowly so there is almost no descent on the other side. The road is not difficult to drive, I remember some narrow spots in villages and the custom house at Castasegna is very severe on the Italian side.
