We will be staying in Positano for a week in July, after spending time in Florence and Rome. We plan to do day trips to Capri and Amalfi/Ravello. Is Sorrento a place worth spending a day visiting as well?

It is ok. When I got there last May 2018 I was not impressed given all the hype. It is just a resort town
What was really annoying and it is probably going to be worse is the crowds waddling around clogging up the area
That whole area is so touristy albeit beautiful at night when all the day trippers go
Sorrento has a hop on hop off thing that we took all the way to Amalfi

IMO, Sorrento is definitely worth a day trip. It's a beautiful city and you'd probably enjoy having a look around and trying out one of the great restaurants. Are you planning to visit Pompeii or Herculaneum during your visit?
