Any suggestions of which company we should use for a day tour of Siena ;

Check the website for Context Florence. Very small groups, and amazing guides. I've used them many times, in Florence and in other cities, and I've only had great experiences.p

This is one where you really don't need the expense of a guide. You can take the bus to the historic center of Siena and return when you with -- there are buses a couple of times an hour all day until late evening. (check for last two bus times when you get off) The sights of Siena are close together and you can see the key ones e.g. Cathedral, Campo, Town Hall and Torre Mangia easily in a day trip. Either climb the Torre Mangia or if that is too daunting, access the view point from inside the museum. It is a wonderful day trip from Florence.
