Customs

We are boarding a cruise ship in Trieste and going to Croatia and Greece.
Do we have to clear customs when we return?

When you say "customs" do you mean just customs or the bad habit Americans have of combining immigration/passport control and customs? They are two separate things. Customs is for your stuff. Immigration/passport control is for you.

As was asked earlier, returing to where?

If you are going from Greece to Trieste, you stay in Schengen so you shouldn't have any passport control or customs.

Normally, there isn't. But Italy has the right to check if they want to. Doubtful from a cruise ship.

Italy, Croatia and Greece are in European union, so no custom control on imports (but for tobacco and alcool in large quantities).
Italy, Croatia and Greece are in Schengen aerea (not the same thing) so no immigration control. Spot controls always possible.

Italy, Croatia and Greece being in Schengen area, the 90 day stay limit is general; that is, time spent in each country is summed up. Crossing the border does not restart the clock.
