Critique my Trip - Should I skip the Dolomites?

Hello Friends:

Having second thoughts about my travel itinerary. I initially wanted to go to the Dolomites but didn't do as much research as I should and we will be traveling too early in the season. Dolomites is unpredictable early June. I would like to get your input. Thanks in advance.

About us: My husband and children like nature more than the city. Bike rides, swimming (prob too cold), hike...etc. I love shopping.

Two things can not be changed: 3 nights in Lazise because our hotel stay was non-refundable but dates can be changed subject to their availability. (Quellenhof Luxury Resort Lazise) and return day/time May 9th (VCE) Marco Polo Airport

Option 1:
May 27 Fly into Trieste
May 27-June 1 Croatia,Rovinj
June 1 - See Lake Bled Stay in Levant Austria one night
June 2-5 Alpe di siusi driving through Cortina d'ampezzo, hike, visit Borzano
June 5-8 Lazise, visiting Lake Garda and Verona
June 9 Venice/return home

Option 2
Everything stays the same except shortened stay in Alpe di Siusi by 1 night. Only 2 nights instead of 3 in Alpe di siusi (worried about fog, rain, slush)
Stay 2 nights in Venice instead of 1 (My husband and I have been Venice 2x before but my children haven't been)

Option 3
May 27 Fly into Milan
May 27-30 Milan
May 30-June 3 Bellagio, Lake Como...etc
June 3-6 Lazise
June 6-7 Bologna
June 7-9 Venice

Option 4: Suggestions??

I stick with your Option 1. Weather in the Dolomites or any where else is just as unpredictable.

Your dates are still early for hiking in Cortina, likely you will have only lower altitude options. Numerous stores and restaurants will be on break between seasons.

One night in Venice? would you go to Disneyland for 15 minutes? Yes, you have seen it, but why bother if your not going to stay and enjoy it. Your flying into Italy and out of Italy, I would tighten up your circle of places that your traveling, spend less time moving and more time enjoying where you are. Forget Croatia and Lake Bled, stay in northern Italy. J
