Cortona apartments and hotels recs

Hello all. I've been staring at hotel and apartment sites and reviews for Cortona for days, but don't know what to do. I posted a long post in this forum about our first trip to Italy coming up next April, and my plan is to spend 5 nights in Cortona or right outside of it to use as both a place to soak up hill town ambience and also to use for a couple of day trips.

We will be coming from Venice and will have stayed in apartments both there and outside of Pisa. We like being able to fix something to eat, have a fridge, etc and not have to eat out 2 or 3x a day, but I haven't ever rented an apartment from a booking site - just from boutique apartment rental companies. There are about 100 cute apartments on the booking sites but I'm a little nervous about renting from AirBNB etc - I have allergies and am always careful to not get stuck somewhere that doesn't work for me. Because of that, I was also looking at hotels in Cortona.

  1. Does anyone have any specific apartments they have loved in Cortona or right outside of it? I looked at Pancraza (SP?) and Il Gelosie and neither appealed to me so if someone has stayed somewhere else and liked it I'm open to ideas.

  2. Has anyone stayed at either at Le Corte di Ambra and Monastero di Cortona?

I don't have any apartment recommendations but I've booked a number of apartments through booking.com and they have been great. I read the reviews thoroughly, never book anything with less than a 9 overall rating, and never book non-refundable rates. When I ask questions, I expect reasonably quick responses from owners. There is another thread here about short term rentals with some great advice. I don't use airb&b because I find they have less agreeable cancellation policies overall, and I've always found places I like via booking.com.
