We did a class in Florence at the market. Look up Testaccio mercato cooking class, withlocals.com or getyouguide.com and filter it to culinary or cooking class. You’ll find things there. Let us know if this is useful.

cookwithusinrome.com had availability when we contacted them a few weeks ago. I believe I found them through a referral on this web site. We are also going in December so can't recommend them yet; but found a recommendation and they do have great reviews on trip advisor.

We participated in this one a few years ago, and we both really enjoyed Chef Andrea explaining so much about real Italian food & culture, and of course the food.

I also did the class with Chef Andrea three years ago. It was reasonably priced and I really enjoyed it!
