Cooking classes in Tuscany

I’m interested in a cooking class in Tuscany. I’ve checked out cookingintuscany.com but I’m not sure if I want an entire week of cooking or just a day or two. Il Vicaro looks wonderful but I’m wondering if you can register for classes for a couple of days or what?? Has anyone stayed there before? Any suggestions would be appreciated.

It looks like you can do a one day class at il Vicaro.
I think I would be inclined to do a second class in a different location, the different areas of Tuscany have variations on their foods. This one is located in Chianti.

I believe I'll Vicaro is by Lucca or San Gimignano.
