Cooking classes in Italy and Sicily

We will be in Bologna, Puglia and Sicily in November. We have enjoyed cooking classes and thought that someone might recommend two; one for in Bologna/ Puglia and in Sicily. We like pasta making and would like to learn some Italian/Sciilian dishes.
