I believe that Judy Witts (www.divinacucina.com) now has her cooking school in Colle Val d'Elsa - a beautiful hilltown. For a cooking school in central Florence, there is Cristina and Gabriella at Scuola de Arte Cullinaria Cordon Bleu. Here's LINK to this cooking school. My wife and I have attended a one-day Tuscan cooking class at this cooking school. We had a great time.

We had a really good day last summer with Cook Eat Italian. The Kitchen farmhouse day we chose included transport from our hotel in Florence and the day spent learning to cook on a farm near Greve in Chianti. Highly recommended!
