I will be in Florence for 3 days in April and would love to take a cooking class either in Florence or a town accesible by mass transportation. Has anyone done this before? How do I find something like this? Thank you!
Ardith I have seen this topic many times but can't remember when. Just google cooking classes in Florence.

I would highly recommend In Tavola! It's in Florence right across the Ponte Vecchio (the "main" bridge in Florence). These classes are very reasonably priced and you get to make (and eat!) a great quality 3 course meal. You receive all the recipes and eat together at the end. The class had a very good energy since the chefs were instructive yet entertaining at the same time!
There are different types of classes offered depending on what you want. I did the most affordable class and it usually lasted around 3 hours. It's a lot of fun!!
I personally can recommend my friends at the Cordon Bleu cooking school in Florence - check out their site and see what they have on offer for that particular day, or you can email them and ask if they have other options. They really are amazing Italian cooks!
No personal experience but this lady gets good reviews and is a frequent contributor over on slowtrav.com
