Cooking class in Umbria and Bologna

Looking for recommendation for a cooking class in the Umbria region of Italy and in Bologna. Thank you for any suggestions.

I just took a class at CIBO in Bologna earlier this month. We made Bolognese sauce, artichoke sauce, tortelloni, and tagliatelle. They have both day classes and longer term students (we got to try some of their food). It was a great experience and I would do it again.

Alla Madonna del Piatto near Assisi comes highly recommended. I was planning to take last year and was impressed by my contact with the owner, via email, but unfortunately my trip plans changed.

I second Alla Madonna del Piatto. Letizia is terrific--smart, funny, and kind. Her house is in a beautiful spot and her cooking hews to traditional but with a twist. You'll learn a lot from her.
