We just returned from Italy and did a cooking class in Rome with Andrea Consoli. We added the wine pairing (using only Lazio regional wines) to our meal for an additional charge and enjoyed it all very much so would recommend it to others. His website is at www.cookingclassesinrome.com.

My wife wanted to do a cooking class while I was tied up on business in Rome. I also found his website, and though he requires a group, I let him know her schedule was flexible. He was able to fit her into a group and accomodate the fact that she is a Pesce/Vegetarian. She really enjoyed her afternoon, and she would recommend the class highly.
