Would love to add a pasta/pizza/wine cooking class in Florence to our my way tour coming up next week.

The cooking school in the Central Market (upper floor) also offers classes. You can visit their website https://www.cucinaldm.com/en/courses-2/ to see what courses are offered during your visit and the prices. I've not participated, but the people I've watched all seem to be enjoying themselves.
We will be in Florence in October and signed up for a class at In Tavola cooking school. They’ve had some good reviews here and on Trip Advisor. Lots of different types of classes to choose from.
After much looking I’m signed up for 2 cooking classes next month at the site Frank mentioned: https://www.cucinaldm.com/en/courses-2/. Ravioli and gnocchi - each class is 2hrs long and $60 each.
We booked a private class through https://www.vinaio.com/cooking-programs/private-cooking-activities. We had a wonderful experience and I highly recommend it!
