Can anyone recommend a 1 day cooking class in Florence for 4 experienced cooks? RS suggests Paola Migiolrini but she has responded with a set menu for next May. That makes me nervous! How about either Giglio Cooking or Florence Cooking Classes' "Wanna be Italiano" class? Thanks!
There are literally hundreds of people doing this now in Florence - and many unfortunately are amateurs and unlicensed in the trade, etc. Make sure you go with someone reputable in the end. I know price is the major price driver for most people nowadays, but you do get what you pay for. I can make a personal recommendation - you could contact them directly and see if they could offer something to you specifically - which is the Cordon Bleu school in Florence: http://cordonbleu-it.com/
We did a class with Melanie through Spice Lab, and loved it! She is a well known chef. We did the class in an olive grove in Tuscany, starting in the central market. There are a few options, and its a maximum of 4 people.
I have no personal experience but Judy Witts Francini at Divina Cucina gets very good reviews and has been doing classes for a long time. http://www.divinacucina.com/index.html# She is also active over on www.slowtrav.com
I have met Melanie and Judy also has a legendary reputation. Both of these are good suggestions also.
