I am planning a Trip to Italy for 3 weeks, Apri 11- May 1st.
First stop Venice 4 nights
then Florence 4 nights
then Sorrento 5 nights
I want to take a cooking class , go hot air ballooning and rent vespas . I have night with no reservations made I was thinking about agritimiso to stay at . Suggestions are welcomed on where to take cooking class go ballooning rent ,vespas and agritimiso stays

Did you go last year to Sorrento since you were asking similar questions a year ago. You question is extremely broad and difficult to respond to with out more information. Is it April, 2018 that you are planning? Time is short. What are you flight arrangements?
Cooking courses are common. Check with the local TI in the area you stay.
Generally you need a car to stay at agritimiso simply because they are in the county away from the towns and not serviced by public transit.
Unless you are an experienced motorcycle rider with a license endorsement, renting a Vespa is a bad idea. If you do, you will need the International Driver's Permit. Get it now.

I am flying into venice flying out of Rome
I have 4 nights in Venice at the hilton
4 nights in Florence at the Hilton
5 nights in Sorrento at the Hilton
Vespa renting would be best on Capri. Charlie Rent Scooter is about 50 Euros/day (24 hours) for double. Limited cars on the Island, so less chance of traffic congestion like you could have around Sorrento or along the coast. Easier to find parking as well. You could tour the entire Island.
