I stayed in a great one, just across the Grand Canal from San Marco, about 100 feet from Santa Maria della Salute. Their e-mail is [email protected]
It was 50 E a night for a single with breakfast. No English, but it worked out OK. (and they take in girls from the Univ of Venice, so when I needed to communicate something to a sister, one of the girls helped out as a translator. You could also check MonasteryStays.com
