going to florence in january and was hoping to find a special tour for eclectic coffee lovers. such a thing?
Any coffee shop will have great coffee…thankfully there’s NO Starbucks in Florence!
Not sure about any coffee tours but the owner of Coffee Mantra loves to discuss coffee, coffee making, etc. IMHO best coffee in Florence.

I have never heard of a coffee tour in Florence, but that doesn't mean there isn't one. Italians do love their coffee.
You could contact a company that does food tours and ask if they can do a coffee one or modify a tour to feature coffee. I wouldn't be surprised if some coffee aficionado on staff would love to do that for you.
I don't think Florence has the historic coffee houses like Venice, Padua and Rome but here's some examples of a list of "the best" coffee places in Florence.

Kperry, what a great question! I’m bookmarking this one for future reference. My former VP bid an auction item in Seattle and took our leadership staff to a half-day coffee tasting at the headquarters of Starbucks. I learned so much about my palette nuances through the 16 or so tastings!
This won’t give you the full experience you’re wanting, but I have asked my chefs at cooking classes how they make their coffee if it seems appropriate to ask. Usually they’re glad to show me while I’m there….and also tell me how the other regions don’t know how to do it correctly! ; )
I know most travelers turn their noses up at Starbucks in Europe but the Starbucks Roastery in Milan, imo, is worth a visit.
I was surprised to see that starbucks had made its way into florence when we visited this past august. I couldn’t imagine it would be busy with all of the other local options and yet it was packed everyday when I passed by (it being next door to our hotel).
