I will be in Rome for 2 weeks in early November and in Florence in mid November. I am looking for venues where I can hear classical music (no opera) - orchestra, organ, choral. I found a few programs in Florence but they seem aimed at tourists, not classical music lovers - greatest hit type of programing. Any suggestions would be appreciated.
Rome’s Jubilee of Choirs is the big citywide event next month if you can make it there on November 22 & 23.
AFAIK, there is no universal source for classical music concerts in Rome or Florence. You have to do a lot of in-the-trenches work to find non-touristy concerts that you’ll find on commercial websites like ClassicTic.
The main classical music institutions in Florence are:
Maggio Musicale Fiorentino - opera and large symphonic and choral concerts
Amici della Musica - classical soloists and chamber music
Orchestra della Toscana - chamber orchestra, symphonic concerts, all over Tuscany (check the venue!)
On a lesser scale, Orchestra da camera fiorentina.
In Mid November, MMF has a concert (Sibelius and Ravel) on Nov. 21st, Amici della musica have a piano concert on 15th and a string trio version of Goldberg Variations on 22nd.
Sure you do not like opera? On Nov. 16th there is Lucrezia Borgia at MMF with Pratt, a really extraordinary diva soprano.

We heard some wonderful concerts at Parco della Musica in Rome several years ago.
In Rome, St. Paul's Within the Walls often offers concerts. I'm not referring to the opera concerts put on by an outside organization, but those organized by the church. You can find information on the church's website: https://stpaulsrome.it/
