We're going to San Gimignano for several days and then will be driving to Florence and spending two or three days there. I'm looking for suggestions for some day trips. We've been to Volterra, Siena, montoriggioni, certaldo, and Greve Chianti.

Except for Colle Val D'Elsa, you have visited many of the most famous near San Gimignano.
Visit Colle VE, of course, maybe Barberino and Castellina, which are close, then venture a bit farther (but not that far really).
The Val D'Orcia area is not too far (Pienza, Buonconvento, Montalcino, Montepulciano, San Quirico, Monticchiello, Bagno Vignoni) and also get some ideas here:

Some of the cities in the above website (all devoted to Tuscany) may be a bit far, so plot them on a map before driving there.

Arezzo, Sansepolcro, Anghiari are also worth looking into.
