Does anyone know when the Christmas markets open for business? Any recommendations for which cities or towns have particularly good ones? I'll probably be traveling between Venice and Rome.

Verona is very good. Late November through the day after Christmas. Italians enjoying Bratwurst with Sauerkraut washed down with a cold beer.

Christmas Markets in Italy usually start on Dec 8, Feast of the Immaculate Conception and go until the Epiphany Jan 6.
For countries like Germany, Austria and Hungary they start in Advent, which will be November 29 this year and end right before
Christmas.
We were in Sicily early December last year and the Christmas Market in Catania was open (December 5th) . We also did a
Christmas market river cruise starting in Budapest ending in Nuremburg, it was awesome!
