Meant to add that we ate here http://www.ilgiardinoromano.it/chi-siamo/ a couple of holidays and were pleased. They do not jack up prices AFAIK. Again, reserve, because the street will be lined with people who did not.
Carl, As an alternative while in Rome several years ago we visited a chef on Bon Appetour. His name is Alesandro and we dined with him and his girlfriend in their home. It was wonderful. We did this twice which is quite something considering all the dining options in Rome. Just a thought.
