I know that there is a "rolling Venice" pass for those under 30, but are there any children's prices for passes? What age do they cover? What about children's prices for tours and museum entrances? Venice card? I know there are some freebie deals for kids under 7, but my son is 8.5, so that doesn't work. Anyone have any experience with children's pricing? What about "children's menus" in restaurants and cafes? Is there such an animal? How is sharing a plate viewed?

I don't know about the Venice pass, but some museums in Italy have reduced ticket prices for children under a certain age. Restaurants don't have children's menus, but they have no problem with you sharing an entree, which is what we usually do with our two kids.
The Rolling Venice Card has a lower limit of 14, so your 8.5 year old doesn't qualify. As far as I know, most museums do not have reduced prices for non-EU citizens, although some seem to have a family rate (2 adults, at least 2 kids, some with reduce entry - e.g., read the fine print for Secret Itineraries Tour prices).
I'll ditto what Claire said about restaurants: children's menus are nonexistent, but sharing is fine.
After reading all the fine print on the Secret Itineraries tour, I purchased 2 adult and 2 cildren's tickets. I was under the impression I needed a Rolling pass for the kids. When I went to pick up the tickets, they didnt' ask to see the pass. I don't remember getting kids prices on anything else in Venice. In other parts of Italy kids prices only applied to EU kids. No, I didn't see any kids menus, but we shared plates and had no problems.
