We are staying in Catania, Sicily Sept.24-29th 6 nights @ TERRE DEL CARDINALE AGRITURISMO(Stradale Cardinale Catania, 95121 Catania). We will have a car what is the must to do around that area? Also, any suggestions on local restaurants, maybe a nice beach,?

The historical center of the city is a major "must", but you'll have to ditch the car in some parking lot so you can cover it on foot. I'm not sure you'll find nice beaches very close by since it's a large, busy port city. I would definitely drive up and see Mt. Etna and Taormina as day trips.
Taormina has beaches, too.
La Pescheria, the fish market.
ViaMichelin.com estimates the drive to Siracusa at less than an hour. Key sights are the medieval district (Ortygia) and the archaeological park and museum.
ViaMichelin highlights scenic roads in green, and I see a lot of green near where you're staying. Head inland!
