You can try castleandpalacehotels.com and select the Italy section. The site has a map with lots of castle hotels. I would use it to identify possible options, then seek out the websites of individual properties for more complete info.

One can visit the castle t Malcescine but they do not operate as a hotel. How bout a whole castle? Probably not what you are looking for, but for others reading here, VRBO #407208 is a castle in the foothills of the Alps near Torino. 7 bedrooms, sleeps a large family or group. Only rents by the week, for 1500 €.
