I want to fly from Paris to Venice and eventually get to Tuscany but be able to stop in Florence to see the David with my daughter. After Tuscany I plan for us to go to Rome, who wouldn't? Is the best thing to get a car in Venice and drive? Drop off costs if I drop if off in Florence or somewhere and then train or fly to Rome? What's the best itinerary for this duration of our trip?

From Venezia Santa Lucia-Firenze SMN station. Then when you're ready to leave, rent a car, use Autoeurope to book. The drive is 1 1/2 hours to your lodging San Giovanni d Asso.
Drop your car in Chiusi. Train is across the street and train into
Rome.
I do have a question about your lodging location in Paris.
Are you aware that it will take 30-45 minutes to get into the city? That's by Metro, the bus will take much longer.
