We are going to be in Tuscany for 3-5 days in September and would like to rent a car. It would be nice to do the ride in a convertible...any website recommendations?

We've rented with Hertz several times and have been very satisfied. You can do everything online and their quotes are accurate and cancellable. I think they offer premium cars; not sure if you can specifically request a convertible but the website should have that info.
There's a very convenient Hertz office in the town of Chiusi in southern Tuscany (1 or 2 stops north of Orvieto). It's literally across the street from the train station, which is great if you start out in Rome and take the train to Tuscany.
Be aware, though, that small town offices sometimes have short hours.
As for driving in Italy, I agree to stay out of the cities, and even the hill towns. Park at the edge of town and walk in. The narrow streets and steep hills are a huge challenge for a manual transmission!

Autoeurope is a broker/consolidator that uses Hertz/Avis/Europcar, etc. They are fantasitic, and their rates are 20 to 40% less than the majors that they use! Make sure that you book your rental car here. Go to the AutoEurope website, and you can pick the location that you want to rent from.(Ie. there are usually several locations in each city.) Check rates on the car you want, on their website, and compare it to rates on any other websites. Note that some insurance (CDW), which is not mandatory in other countries, is mandatory in Italy. Also fiddle around with you "pick-up" location. If you start your rental at an airport, this will also raise your price by another 10 to 30%. Droping it off at an airport will not USUALLY incur any additional charges.
