It sounds like you don't need a car for the Paris part of your trip. If you take the train to Florence, you can pick up a rental car there for time in the Tuscany countryside. But a car isn't useful to go to the Cinque Terre - there is very limited parking. If you're just making a day trip, you could drive to Pisa, Viareggio or La Spezia and park you car there and take the train to the CT. If you're staying longer, return your car in Florence and train from there.

The basic advice I give is to look at Autoeurope for information on rental rates, office locations and times. Driving in rural Italy and on the Autostrade is easy. Driving in cities is more challenging and parking is hard. But having a car means you can stay in the country and do day trips to smaller towns very easiliy - except for the CT. Good luck!
