I don't know how big a room you'd need, but a quick search on booking.com shows a lot of availability during this time frame at a variety of prices. I usually look at as many reviews as I can on booking.com, venere.com and tripadvisor, then contact whatever hotel looks best directly to book a room.
A lot of agriturismos have a minimum 1 week stay, especially in the summertime, so that might explain why you haven't found availability for your requested dates.
