How long to stay and what are the must-sees?

It of course depends on when, ages, size of travel group, time of year and budget - but, generally, Tropea is a very interesting spot - nice beach, churches and lovely town at the top of the hill, which becomes very busy in the summer, especially, as the population swells in the summer.
Calabria is also home to La Sila which is a national park. Along the drive up, you will find spring water (that people bring vessels to fill up with), agroturisomo hotels, restaurants and reputedly the cleanest air in all of Europe. When speaking of Italy, the country's national parks are seldom mentioned. We have been to this one and it was lovely.
The city of Cosenza has a castle and is a university town. The main area downtown also has a nice pedestrian shopping/dining area.
Calabria has alot of natural beauty and offers great value. It may not be best for a first time traveller to Italy, depending on your comfort level with Italy.
Calabria deserves to be explored without rushing. It lacks the glitz and abundant famous sites of the north, but is a truer relection of the 'real' Italy.

You may get some good information by having a look at the Lonely Planet chapters on Calabria - https://www.lonelyplanet.com/italy/calabria . They offer individual chapters of their guidebooks as PDF downloads for a very reasonable price, and I keep those on my phone and find them very useful for reference.
