You can buy tickets at the bus station in Florence. No need to prepurchase. The tickets are cheap.
From Florence to Poggibonsi click in Servizi Extraurbani and then Servizi Extraurbani su gomma then on one of the 131 buses

From Poggibonsi FS (train station) to San Gimignano, select bus no. 130

You can also go to Poggibonsi by train instead of bus, it making take a bit longer, check schedule on www.trenitalia.com.

The bus to S. G. from Florence goes from the bus station on Via S. Caterina da Siena.
Facing the main train station (SMN), walk to the left ,across the tram tracks, and the station is through a big driveway on the right hand side of that street.
You have to look for it, as it's not immediately obvious.
No need to buy in advance.
Buy your return tickets at the same time, as there is nowhere really obvious to buy them for the trip back.
The ticket seller will tell you which bus to get.
They are big, comfy, and have AC.
You change buses at Poggibonsi.
The bus stops are all in a row in an open area in Poggibonsi, and the train station there is visible at the bottom of a slight hill nearby.
Behind the stops is a cafe to quickly get a coffee if there's time.
Coming back, same thing in reverse.
The bus drops you right at a main gate into S. G.
We did it in 2019, and it could not be easier!
