There are heaps of books set in Venice.
The Aspern Papers
Death in Venice
All those Donna Leon / Brunetti books. All of them say something about Venice.
I have just read a couple, “The Venetian Game” and “Vengeance in Venice”.
They are both very evocative of Venice, great reads. The author lives in Venice, and the stories really draw you in.

A very good popular history is Roger Crowley’s ‘City of Fortune: How Venice Ruled the Seas.’ A very nice read.

A wonderful work of historical fiction: In the Company of the Courtesan: A Novel: Sarah Dunant. I was so glad I read it before I went to Venice.

Visconti's 1971 movie "Death in Venice" is getting hard to find now on DVD but maybe available for download. In any case it's beautifully filmed on Lido and Venice sites and it inspired me to actually read Thomas Mann's novel.

I'm reading City of Falling Angels right now by John Berendt (author of Midnight in the Garden of Good and Evil). It's been a fun read.

I like to recommend this non-fiction book: "No Vulgar Hotel" by Judith Martin. She is a syndicated newspaper columnist in the US who writes very cleverly, on the history, customs and social structure in Venice, where her family has owned a palazzo for many years.

Peter, my husband just completed "The Venetian Game" per your recommendation and thought it was a great read. He is looking forward to "Vengeance in Venice." He recently read "City of Falling Angels" and Donna Leon books. In addition I am starting "The Girl from Venice." I also have "The Four Seasons: A novel of Vivaldi's Venice" in my book pile.

Looking forward to looking at other recommendations mentioned here since we have a few months until our visit to Venice.

As per damacario77's mention, I read 'City of Falling Angels' before our October '17 trip and I was struck to visit the Santa Maria dei Miracoli church that was written about in the book. One of our B&B's hosts was excited when I told him we were going there one afternoon, he said it was his favorite church in Venice. It was wonderful and only about 3 other people inside when we visited.

Don’t Look Now. It’s a novella, by Daphne du Mauier, and a movie, with Donald Sutherland. I remember liking both.

Miss Garnet's Angel - story within a story. One story is a retelling of Tobias and the Angel, part of the Apocrypha. The modern story is set in Venice. It took me on a treasure hunt to a local church, the Chiesa dell'Angelo Raffaele. Now I am always on the lookout for paintings featuring Tobias with his dog and fish and angel. There is one in the Accademia in Florence.
