Booking in advance -- Florence, Siena, Venice?

Hello, experts!
I know that had we not booked months in advance, our family wouldn't have gone to the top of the Eiffel Tower.

I may already be late, but are there things like this that require my immediate attention for a June trip to Venice and Tuscany?

Traveling with our 3 kids so a Venetian gondola ride seems a must -- any pre-booking required here?
A day tour in Florence is booked, with tickets to museums. Much of our trip will be Tuscan countryside from a 2-week villa stay, so it's just the bigger places I'm wondering about.
Over-worked, homeschooling mom here feeling overwhelmed. Every time I "research" it's a rabbit hole of information!

Venice : Wait till you get there. There is no shortage of gondolas, and no need to pay extra to a tour company.
