Booking in Advance- December

For the month of December, is it necessary to book things in advance? I’ll be in Florence and Tuscany for 2 weeks. I’m thinking:
1. uffizi and accademia
2. Restaurants and wineries
3. Hot springs (bagno vignoni, fonteverde)

For #1, I would say that it couldn’t hurt. However, late April seems too soon.

2, also too soon now, but for holiday eves and days you should get restaurant reservations. Also, check out which days are holidays. There may be some that are not special in the U.S., but celebrated in Italy.

3, I doubt it.

Restaurants and wineries generally expect reservation. Doesn't have to be far in advance just a couple of hours work but longer for wineries.

When in December?
Italians as well will be travelling weekends and during the Christmas holidays. 8th December is a public holiday but this year it's on a Sunday so no 'ponte' or long weekend.

For clarity:

14-16 in Venice
16-23 in Tuscany (Siena as a base)
23-30 in Rome
