i wanted to ask how Bolzano is on Christmas eve and Christmas day? any tips, restaurants open etc to help?

It sounds like a good choice. Check directly with the restaurants that interest you most. The Ice Man museum lists early closing hours on the 24th and closed on 25th. See also info about the Bolzano Christmas Market.
