Please give me some recommendations where to stay. I did not see much on this website about these two cities so would appreciate any recommendations.
I stayed at Albergo Arena in Verona last year. it is about 1/2 block from Castelvecchio, and about a ten minutes' walk from The Arena of Verona.
While it was not fancy, plush, or anywhere near soundproof, the employees were all very helpful and nice. Most spoke at least some English. They had a really good breakfast in the mornings of: cold cuts, cheese, cereals, toast, fresh fruit, juice, coffee, pastries, and some other things I can't remember. We had a room with a shared bathroom. There was a covered balcony at the end of our hall. There was a small elevator (SMALL, but helpful with luggage nonetheless). There was someone at the front desk from around 7 AM till about 10 PM. While not frilly or fancy, it was economical and their breakfast got us off on a great start for lots of walking and sightseeing!
I had an awful time finding a centrally located B&B in Bologna. the options I found were either expensive, got poor reviews, or were not central. I ended up picking the Hotel Paradise - it's not a B&B but it has about 20 rooms and they've been wonderful to deal with. Not sure when you're planning your trip but I'll be there in a month and happy to let you know how my stay is.
In Verona we liked Hotel Torcolo. Bologna was more challenging--for an upcoming trip we're staying at:

Rachel,we have also stayed at Hotel Torcolo. The rooms were non smoking, very clean and neat, and had a private bathroom. It is about a 3 minute walk to the Arena and Piazza Bra. Dianna and Caterina were very helpful too. We thought Verona was a real gem! Enjoy your journey! www.hoteltorcolo.it Also, if you arrive by train, you may want to buy a Verona Card. I think it cost $12 euro for a 3 day pass. It will cover your bus ride to and from the train to Piazza Bra and most of the sights you will want to visit. It saves money and time.
Last May we stayed in a B & B in Bologna named Casa Ilaria, enjoyed it so much we are staying there again when we go to Bologna in October. Very clean, spacious room and private bath, conveniently located, and Ilaria is a very gracious and accommodating hostess. You can even arrange for her to give a cooking lesson in the Bolognese style.
