We love Bologna. We stayed a Hotel Europa b/c we had a car and they offered free parking. The location is also good if you come train. The hotel had excellent breakfasts and it was a short (10-15 minutes) walk to the Piazza Maggiore. Then walk from the Piazza to Via Clavature and the surrounding side streets. This is the Mercato di Mezzo-- amazing food vendors and small shops. The sites below will help you out

We stayed at the Albergo Centrale it's very close to the Piazza Maggiore in the center of town. It's an easy bus ride from the Train Station. Much of the action in bologna is close by. info@albergocentralebologna.it

I took a 5 day class at the International Cooking School last October and had a terrific time - I recommend them highly. They offer classes with a variety of topics and lengths taught by Mary Beth Clark. In addition to time in the kitchen, we got some behind-the-scenes look at a coop making parmeggiano-reggiano, a balsamic vinegar maker, and a lesson at the restaurant LaFrasca. Accomodations were at the Grand Baglioni (expensive) or Hotel Roma (moderate); I had a nice stay at the cheaper Hotel Roma which has a great location just south of Piazza Maggiore, a nice staff, and comfortable if rather dowdy rooms.

The central markets just east of the piazza are great strolling for a foodie, and Bologna is a good base to visit Parma (for ham and cheese) and Modena (for balsamic vinegar) as well. Restaurants are particularly liked were Diana and Graselli, which both have traditional Bolognese specialties. The city is a great place to just stroll, shop, sightsee and eat.
