I recently read about Venetian sailboat tours through a company called Laguna Eco Adventures. They boast that you can avoid the tourist-heavy gongola lines and sail the back canals of Venice at sunset. Has anyone ever tried this? Has anyone ever heard of this company? Thanks for your input!

Don't know anything about them, but I looked at their website and they have reasonable sailboat cruise prices. But the sailboats don't go in the back canals of Venice. There would be an issue with low bridges.
They use "traditional" boats for touring Venice, which are likely smaller wooden power boats. That would be a fine way to see Venice, but it would not be the same as a gondola ride (which don't usually have "tourist-heavy" lines.) Gondolas glide quietly through the canals.
I didn't try anything like that, but we took the regular boat to 2 of the islands, (Murrano was the last one) at sunset and we were able to see it.
Never heard of them. BUT I have never seen "tourist heavy gondola lines" - if you want to take a gondola, there are endless gondoliers all over Venice. Rick Steves' tips for taking gondole in the smaller streets rather than from San Marco is a good one - definitely cheaper that way.
