Bistecca Alla Fiorentina

I've noticed that Florentine steak is often listed in menus with a price by the kilo. Does that mean you can choose whatever size you wish?

Not really. None of them are small, most are for a minimum of 2 people. You might get some options, or can request something on the smaller or larger side, but you pay by the kilo, no matter what. And, always cooked rare. Zero choice there!

No, unless they have steaks that vary in size, and you pick the smaller one (or bigger). The steak is a Porterhouse and cut pretty thick, I think you would find most steaks would run about 1 kilo (~2 lbs) give or take.

“Not great for someone traveling solo”. Why not though? The first time I had a Fiorentina it was in San Gimigano, in Tuscany, and the waiter brought out at least 6 different pieces for me to choose. Trust me when I say that I didn’t think I’d finish the whole thing but I did and it was the best meat I’ve had in my life. Truly unforgettable. Just don’t ask for it medium.

If you ask for medium or well done (cotta bene) the chef will put you on the grill and you will be the steak. The steak will be served rare 🥩

It’s big, so even two people would have a lot to eat. Maybe the restaurant can try to accommodate you and prepare the smallest steak possible.

The steak really is good . . . very good! I'm also usually a solo traveller. After years of avoiding the Fiorentine beef, I decided to go for it. The restaurant was in Siena. The waiter's eyes almost popped out of his head when I ordered but I told him that I had a refidgerator in my hotel room for whatever I couldn't eat then. I've never had so much fun at a meal! Evidently he told many of the regulars. He made a big show of it when he brought the meat out and lots of people stood up and raised their glasses of wine. People came by the table and asked how I liked the steak. No, I couldn't finish it but it didn't last long back at the hotel - great, cold, for breakfast!
Story isn't over yet - the next year I was back in Siena (love Siena) and took some friends to that restaurant. The owner came to the table and, in broken English, said: "I remember you were here last year and ordered the Fiorentine steak. Welcome back, you are a welcome guest."
Go for it! And don't order it medium or beyond!!!!

There are always three cuts so you definitely can choose a meal for one hungry person. Pick either the filetto (filet) side or the costola (rib) side if you don’t want to splurge on the whole thing.

Maybe I’m spoiled, but I’ll take American 55-day dry aged prime beef, reverse seared ten times out of ten. It’s a fun experience, though.
