Birthday in Italy

My sister and I will be in Italy during June-July of 2018. Her birthday is around then and I want to do something very unique and special for her while we are there. Any suggestions?

I went to Venice on that day this year. Take a gondola with an opera singer and then go to the top of the Venice Campanile.

We already plan to see the Bell Tower. I was thinking an Opera as well. Any suggestions in which one or where?

We will be in Venice, Florence and then Rome. We have plans for Bell Tower, wine tour, cooking class, gondola ride, and the usual sites. I really want something special for her.

Would a brand-new 1-star rated Michelin restaurant in Florence qualify? I haven't been there yet, but am going this fall . . . and, hey, it's 1-star, called La Bottega Buon Caffe.

What types of things does she enjoy or like to do? That'd be helpful for the peanut gang here to think of something unique and special.

She really has an interest in almost everything. She likes to hike (be outdoors), read, watch movies play and operas and is artistic. I was thinking perhaps an opera or a play. A day trip to Verona?

Instead of, or in additional to, your gondola ride you two could take a lesson in how to Row a gondola through Row Venice. You can choose a daytime lesson, one around happy hour (which includes stops where you row up to a bar for wine and a snack), or evenings. They last a couple of hours and you will be able to row on the Grand Canal (of course, with instructor along the entire time for safety). It's great fun!
