My wife and I will be in the Florence / Siena area in September. One of the activities we are considering is a 1/2 day bike tour. We have never been to this area so for the tours we are trying to determine the total riding distance and if the routes are reasonably moderate, i.e. not many hills, etc. Any thoughts / recommendations?
I'd also be interested in any information that can be shared regarding bike tours near Florence.

We did not take the tour as we had two people in our group with injuries, but it might be worth checking out. This is a one day tour, but they also have self-guided routes.

Tuscany is fairly hilly except for the coast.
Any tour operator worth its salt will provide extremely detailed info on routes, difficulty, etc. E-bikes are becoming more popular, so that may be an option.
We took a tour from Florence that visited San Gimignano and then biked to Monteriggiono along the Via Francigena and then on to Sienna. The trip was a day, bikes provided. There were three couples. One couple used electric bikes and the rest of us had hybrid bikes that are common in the US. Some short uphills, but we were followed closely by the (air-conditioned) van. At any point you could stop and ride (as about half of us did.)
