We are planning to spend a week in the Umbrian countryside next summer, with plans to do day trips from our base. From there, we'll head to Rome for a few days before flying home to the US. I have about two days between Umbria and Rome and was thinking maybe drop the car and do two nights in Orvieto before taking the train to Termini. Any other suggestions? Would love a village stay in a town with good restaurants.

Orvieto, which is also in Umbria, is an hour train ride from Rome and would be good for two days.

Go with your instinct. Orvieto is a wonderful choice.
