best way to send payment to Italy

After our recent stay at a (beautiful) monastery in Assisi, the nuns asked us to just send a check to them when we got home as their credit card and debit machine were down and they preferred not to take cash. Does anyone have suggestions on the best form of payment to them? They prefer I don't send credit card information. If I send a check, do I write the amount in Euros or do the exchange rate and send it in dollars? I'm just not sure of the correct/efficient way to do this.
Thanks for your help!

marge, I'd suggest either an International Money Order or Bank Draft, drawn in Euros. There will probably be hefty "service fee" but it's a "safe" form of sending money. Don't send the amount in US dollars, as the Nuns will lose money on the transaction. I'm assuming their rooms were priced in Euros so that's the currency they should receive in payment. PayPal is my method of choise sending money oversees. It's quick, easy and all you need is a confirmed email address. Plus it will refund any money that was defrauded from you, and for me, it costs less than going through my bank which charges a flat fee plus ups the exchange rate. Not sure if the nuns have PayPal, but it's 2011 so it's possible. If not, maybe you can remember that for next time.

Thank you for the suggestions. Because this monastery doesn't use Pay Pal, I did the Bank Draft in euros. Thanks again!
