We are flying out from Pisa. We will probably return our rental car then need a place to stay before our flight out the next morning. Hotel recommendations? Best way to get to and from airport to hotel? Thank you!

The airport is very close to the city center, almost walking distance from the Pisa Centrale station (and there is a people mover connecting the station to the airport), so you could stay anywhere. Unless the hotel offers shuttle service, or unless you are staying at the NH hotel in front of the station, in which case you can take the people mover, the way to get to the airport is by taxi.
I stayed here last July (I had to pick up relatives very late at night and didn’t want to drive back home too late), but I don’t think they have a dedicated shuttle (I had a car so didn’t need it). But you can find one anywhere using booking.com, and maybe click on the airport shuttle option. As I said, anywhere you are you won’t be farther than 10-15 min from the airport by taxi (or shuttle if the hotel has one).
