Most of our travel involves preparing our own meals. We prefer to have access to grocery stores with a large variety. Can anybody recommend a good grocery store chain(s) in the Dolomite region?

Where are you staying? It's Italy -- you don't need to cook.
Dolomites is a large area - or better said, a large area with very slow driving - so the closest grocery shop is usually the only practical one. I would say there is a very large and well stocked supermarket on the outskirts of Vipiteno, near the highway exit, but driving one hour to get there would not make sense. - The milk and cheese stores in Vipiteno and Dobbiaco are outstanding.
Most groceries in Italy, especially rural, do not offer what Americans would consider variety. You may need to visit several local, family owned shops to find items you need. Or seek out a CONAD.
Look for Despar and EUROSPAR supermarkets. Despar is a boutique version located in many of the towns. Be sure to pick up speck, cheeses and Apfelsaft!
