The Langhe is well suited to a bike tour, there are many roads with little traffic, the hills are generally modest and generally farmed with views. Try this website: https://www.bik-e.it/en/noleggio/

Better to go direct. Viator doesn't originate tours, it's just a broker and adds cost not value. A recent forum thread on Viator: https://community.ricksteves.com/travel-forum/italy/viator-ripoffs
Italian guides are generally quite good as they must be licensed and meet professional standards..
