We'd love to be able to take a cooking class with a wonderful Italian Mama, but welcome recommendations for any such cooking class. We'll be going to Florence, Siena, Orvieto, Assisi among other destinations but think these would be the best places to find just the right class. Any suggestions would be welcome!

In Assisi, la Madonna del Piatto. The teacher, Letizia Mattiacci, is terrific and her house is in an amazing place in the hills outside the city. She's appeared in stories in US sites and papers and is really into good, simple, well-sourced food.

We did this a couple of weeks ago and it was one of the best days of our trip. There were 10 of us in the class and we made ravioli, tagliatelle, bruschetta, and tiramisu, as well as chopping tomatoes, onions and garlic for the sauce. We also wandered through their garden and met Marcello the rooster. After cooking, we got to enjoy our delicious meal outside together.
Thanks to you all for such great suggestions. I ended up booking a Tuscan Cooking Class in Siena because it was available, had great reviews, and most of all, fit into our tour schedule. I appreciate you all taking the time to share your thoughts, though!
