Is it even possible to find a day trip from Rome that takes you to a beach for the day? I was thinking Capri or amalfi or positano but don't know enough to decide...

I'll just start by saying I've never been to any of these beaches...but going all the way to the Amalfi coast to go to a beach would be a really REALLY long day...Rome to Positano is 3 hrs by car, even longer by train/bus. So 6hr plus round trip is not a good idea.

Ostia , and nearby Fiumicino (the town , not the airport), have beaches and you can tour the ruins ("Ostia Antica") on the same trip if you wish.
The beach at Fiumicino is sandy. Many other places are "pebbly"
A day trip to Positano from Rome for "beach time" is not practical
