I am trying to find a train from Bari (Giovinazzo) to the Sorrento area, but ItaliaRail doesn't even pull up Sorrento as a destination. What's closest to Sorrento that will show up as a valid destination?

Sorrento is reached by commuter train, so it won’t show up on Trenitalia and Italotren searches

There are typically a few fast trains and a few IC trains direct from Bari Centrale to Napoli Centrale each day along with lots of regional options

Up to December 13, trenitalia.com shows only 2 direct trains between Bari Centrale an Napoli Centrale. The first one departs from Bari at 7:05, the other one at 19:35. If you can't see either, you are on reseller's site that doesn't have tickets to sell for these two trains.
There is construction work on the Bari-Naples line, Trenitalia could add more direct trains but I wouldn't bet on it.
The same Trenitalia site shows 8 options with 1 change at Caserta, I'm sure you l can walk between 2 trains in a 6-tracks station.
