I want to explore the Pulia region of Italy; I know English is not spoken much in this region. I have an allergy {not intolerance} to almonds and all cow products. If I carry a note written in Italian that explains this, will that be sufficient? I will learn some words of Italian (as best I can) that hopefully will convey this also. I do eat eggs, pork, chicken, lamb, fish, all nuts except almonds, etc. Any and all help is greatly appreciated! Thank you.

We were there in 2012 on a bike tour, loved the area. I don't think you'll have much of a issue. There is plenty of English spoken in this region. Staff at hotels and restaurants will speak English...take the note with you to show just as a back up..and maybe do a Google translate with more specifics, or get someone to translate this for you---that being said:

You should be fine, carrying the note is a good idea. Most restaurant servers and hotel staff speak "tourism English" or can find someone on staff who does, even in small towns.
You will have to be very careful to avoid "all cow products," since beef will be obvious, but butter or cheese or milk in a prepared dish may not be. You should bring your restrictions in writing (and don't rely on Google Translate; get it from a reliable source), so that you can show them in any restaurant. You may also want to stay in places that allow you to make your own meals, to avoid problems.
I agree with Harold - get a native Italian speaker to help you write your allergies. There are nuances that may be overlooked.
I also include, on my card, my reactions should I ingest my allergen. If your reaction is life-endangering, that may be something to include.
I think that putting on what you can eat, as you listed in your post, would be beneficial as well.
Italians tend not to use cheese with seafood, but almonds could be, such as in a prawn/almond/orange risotto I had in Sicily.

Kay, I think that it is probably a good idea to incorporate this line-or a version of it-in your note as well, so they don't feel that they need to"tip-toe" with other foods, I think you'll get nicer meals if you make this clear to them. You can also compose the note in a light, ice-breaker way. By the way, do you eat beef, or is it just milk products from cows? You'll want to clarify.
